Sandwiches are the classic picnic choice. You can make them as simple or elegant as you like.
Choose a tasty and hearty bread, like ciabatta or a baguette that will stand up better with loads of filling and won't go soggy as quickly. Add to your tasty bread, roast beef, turkey or chicken. Swiss, brie or a strong cheddar cheese, along with dijon mustard, mayo and carmalized onions.
Last, but not least - tomatoes, lettuce and pickles, which I prefer to put in a covered container and add them to your gourmet sandwiches when you are ready to eat.
Smoked Salmon Roll-Ups
Take slices of smoked salmon, fill with
cream cheese. Roll up and slice into 2 inch fingers. Keep chilled.
What could be easier than defrosting a bag of shrimp, rinse, pat dry and keep cold?! Just add a container of cocktail sauce and "Voila"!
Gourmet Chicken Wraps
Grill up your chicken the day before so it's ready to assemble just before you leave.
Put a thin layer of roasted garlic cream cheese on your wrap. This not only adds wonderful flavor, but it helps the wrap to stay together.
Now on to the rest of your wrap ...
Top with chicken, roasted peppers, sauteed onions and top it off with your choice of cheese. YUMMY!!
A tasty chicken caesar wrap is just as tasty as easy to prepare.
Chicken, caesar dressing, romaine lettuce, and parmesan cheese.
Tomato Caprese Salad
Nothing says "Summer", than a tasty salad. Thick slices of tomatoes and fresh mozzarella cheese, drizzled with olive oil and fresh basil.
Peel and thinly slice 3 cups of English Cucumbers. Put in colander and sprinkle with 1 tsp. of salt; let stand to drain off liquid for 30 minutes. Pat dry.
Dressing: Whisk together 1/4 cup of sour cream, 1 tbsp. chopped fresh dill (or 1 tsp. dried dill), 1 tbsp. white wine vinegar, 1 tsp. white sugar.
Add cucumber to dressing and 1/4-1/2 cup thinly sliced red onions.
Toss to coat. Delicious and refreshing!
Gourmet Picnic Snacks
Gourmet snacks can make a light meal all on their own.
1. Assorted gourmet cheeses (brie, camembert, swiss), assorted crackers, olives, pickles, smoked salmon, smoked cold meats (salami, proscuitto, ham), hummus, artichoke dip and a baguette cut into small rounds.
2. Nuts, assorted fruit with dip, tortillas chips and salsa.
Of course a quick trip to the grocery store may give you other great gourmet picnic ideas to pack, without the fuss and preparation at home. A rotisserie chicken, coleslaw, potato salad, baguette, cheese and a wonderful bottle of wine. Presto, your gourmet picnic is ready is an instant!
Of course remember when planning your picnic preparation, that you need to keep your food cool. A bag of ice or freezer packs in your cooler are a must!
